I can not imagine life without eggplant, because they can be salted, and fried, and stewed, and baked. And how good eggplant caviar is, does not describe at all. Therefore, I try to plant at least 1-2 interesting varieties of eggplant every season on my site.

Kirovsky

Kirovsky is an excellent early ripening variety that will show stable high yield for at least 95-105 days. If I see that the weather is unstable, then I always choose it for landing, so as not to miscalculate.

It tolerates temperature extremes and grows well both in the greenhouse and on the open ground. It has a high immunity to many diseases, so you should not be afraid for his health.

The eggplant bush of this variety has no pronounced spikes. In height, it grows on average up to 70 cm, less often higher. The mass of one fruit from a bush varies between 130-150 grams. The shape of the Kirov eggplant is elongated, cylindrical, the color of the fruit is deep purple with a characteristic glossy sheen. All eggplants are neat, as if from a picture. Kirovsky bears fruit for so long due to the large number of ovaries.

The taste of this variety is also in order: the flesh is tender, without bitterness, the density is medium. With 1 sq. meters of planting, I am quite able to collect about 4.5-5 kg of vegetables.

Donskoy 14

Another stable harvested variety is Donskoy 14. I usually plant it if I know for sure that the harvesting this season will exceed all conceivable and unimaginable proportions. I like to make homemade eggplant caviar, as well as cook eggplant in oil and vegetable stew, so this type of eggplant is very suitable for its versatility.

The variety belongs to the mid-season category, it feels great both in open beds and in the greenhouse. In principle, it tolerates temperature differences well, but without any weather disasters.

Donskoy’s fruits are very beautiful, neat, dense, pear-shaped. The color of the vegetables is violet-red (during ripening - green-brown). The taste is soft, without bitterness or astringency, great for any meal.

Sailor

Mid-season variety that begins to bear fruit by about 100-105 days. It is perfectly stored, so if you plan to stock up with vegetables, then choose this particular variety. At least, my personal experience in storing and transporting these eggplants was quite positive: not a single vegetable has soured, rotted, or lost its presentation.

You can plant Sailor both in open beds and in closed ground. The variety has high immunity, most diseases do not take it. His bushes are quite high, they can reach up to 85 cm. From 1 square. Meters can sometimes be harvested up to 10-11 kg of crop, so that is enough for harvesting, and for conservation, and just eat.

But the most interesting thing, perhaps, for me is the appearance of these eggplants. Each fruit reaches 16-19 cm in length; I have not identified any averaged mass indicators. But the color of these vegetables is quite original - they are striped, with white stripes alternating with bright purple or pink stripes. Hence the original name, because the eggplants seem dressed up in vests.

The taste characteristics are also good: the pulp has no voids, not too dense, without pronounced bitterness or acid.

Swan

I use this variety mainly for pickling. With it, like with no other, preservation is very tasty, aromatic, crunchy. The yield of the variety is excellent, the return on the fruit is early.

The bushes are quite compact, medium height (up to 65 cm). It can be grown in open soil and in a greenhouse. The fruits are slightly elongated, cylindrical in shape, the size of one vegetable reaches 19-21 cm (about 6-7 cm in diameter), the weight of one varies between 250-550 g. But the color of ripe fruits is the most remarkable feature of this variety. It is white, hence the variety’s poetic name.

The taste of eggplant is very tender, mushroom, without pronounced bitterness. With 1 sq. meter planting can pick up up to 20 kg of vegetables. To "squeeze" the maximum out of the plantings, I leave no more than 5-6 large inflorescences on each bush.

My love for eggplant seems inexhaustible, which is why I like to experiment with different varieties, try something new. Through such trial and error, I have identified the four most productive and delicious varieties that you can plant on your site. The fruits of these varieties are excellent for pickling, and for baking, stewing, frying, stuffing and other culinary manipulations.
