Holidays sooner or later end, but the severity after a long feast so simply does not go away. However, there are proven recipes for vegetable dishes that will make the process of "unloading" easy and tasty. It is these that we will share with you in this article.

Bean Tomato Soup

A terrific dish boasts a simple but incredibly tasty combination of vegetables.

Ingredients:

  • vegetable oil 2 tbsp. l .;
  • carrots 2 pcs.;
  • bow 1 pc.;
  • garlic 2 teeth .;
  • white wine 3 tbsp. l .;
  • canned tomatoes 1 can;
  • thyme 3 vet .;
  • 500 ml vegetable broth;
  • cashew 3 tbsp. l .;
  • spinach 3 tbsp .;
  • canned beans 2 tbsp.

Cooking:

  1. Cut the carrots into rings, garlic and onions into cubes.
  2. Saucepan with oil to send to the stove. Pour onion and some spices into it. Pass for 3 minutes, then add garlic and carrots. Stew for 10 minutes.
  3. Put tomatoes directly from the jar into the workpiece. Gently crush with a fork and simmer for about 10 minutes, until the tomatoes turn into a paste.
  4. Pour in the wine, add the nuts, half the beans, broth and spices. Cook for at least 20 minutes, stirring constantly.
  5. Pour the soup into a blender, having previously removed the branches of thyme. Beat until smooth.
  6. The resulting mixture must be poured back into the pan, add the remaining beans, spinach and cook for 3 minutes until the spinach softens.

Baked vegetable stew in tomato sauce

This very simple, and most importantly, light meal will literally be a salvation after a long festive feast.

Ingredients:

  • potatoes 1 pc.;
  • bow 1 pc.;
  • Bulgarian pepper 0.5 pcs.;
  • zucchini 1 pc.;
  • thick tomato juice 1 tbsp .;
  • Bay leaf;
  • vegetable oil;
  • greens.

Cooking:

  1. Wash and chop the potatoes with zucchini.
  2. Cut onions and carrots in half rings and pass with the addition of a small amount of oil.
  3. Pour potatoes into the roasting, cover and simmer for about 10 minutes.
  4. Add zucchini, tomato juice and bell pepper, as well as spices as you wish. Continue stewing until cooked.

Vegetable cabbage rolls with feta from Jamie Oliver

So familiar dish, as it turns out, can have a completely different taste.

Ingredients:

  • bow 1 pc.;
  • carrots 750 gr;
  • garlic 4 cloves;
  • almonds 25 gr;
  • olive oil 3 tbsp. l .;
  • cumin 1 tsp;
  • ground black pepper to taste;
  • Savoy cabbage of 8 leaves;
  • several branches of dill;
  • feta cheese 50 gr.

Cooking:

  1. Onion cut into medium cubes.
  2. Chop the almonds and lightly fry them in a dry pan.
  3. Pass the carrots and onions in a small amount of oil. Add cumin, salt, pepper, garlic and some water. Cover and simmer for about 5 minutes until the vegetables are soft.
  4. Add chopped herbs, nuts and feta cheese to the resulting mixture.
  5. For 3 minutes, dip the cabbage leaves in salted boiling water, and then dry.
  6. In the middle of each blank put about 3 tbsp. l fillings, roll up and place in a baking dish.
  7. Pour with the remaining oil and send to the oven for 15 minutes at a temperature of 190 degrees.

Cabbage casserole under cheese crust

The simplest casserole is perfect for those who observe the Christmas post.

Ingredients:

  • brown bread 4 slices;
  • milk;
  • white cabbage 0.5 pcs.;
  • sour cream 4 tbsp. l .;
  • grated cheese 150 gr.

Cooking:

  1. Cut the crusts from pieces of bread, and cut the soft part and pour a small amount of milk.
  2. Cut the cabbage into medium squares and boil until soft, combine with bread.
  3. Add sour cream and spices to your liking.
  4. Add half the grated cheese to the workpiece.
  5. Prepare a form - grease the edges with oil and fill with cabbage mass.
  6. Sprinkle the remaining cheese on top and bake until a golden crust appears in the oven preheated to 200 degrees.

Cauliflower fried with vegetables and eggs

An extremely simple but tasty dish with a great mix of vegetables.

Ingredients:

  • cauliflower 1 cabbage .;
  • 1 broccoli;
  • bell pepper 1 pc.;
  • olive oil 2 tbsp. l .;
  • bow 1 pc.;
  • green peas 150 gr;
  • corn 150 gr;
  • garlic 2 teeth .;
  • eggs 2 pcs.;
  • sesame seeds 2 tbsp. l

Cooking:

  1. Cut cauliflower into small pieces. Grind with a blender to a granular state.
  2. Chop the broccoli and peeled peppers in small cubes.
  3. Heat a pan with oil. Put chopped onions and fry.
  4. Add the rest of the vegetables, including canned peas and corn. To languish about 8 minutes. Add chopped garlic and mix thoroughly.
  5. Move the vegetables to one of the walls of the pan and beat the eggs. When the latter begin to take hold, slowly mix with vegetables.
  6. Sprinkle with salt, spices and sesame seeds to taste.

Spicy Eggplant Dip by Jamie Oliver

An interesting appetizer from an eminent chef.

Ingredients:

  • eggplant 1 pc.;
  • garlic 1 clove;
  • parsley;
  • green chili pepper 0.5 pcs.;
  • olive oil 2 tbsp. l .;
  • lemon 0.5 pcs.;
  • paprika 0.5 tsp

Cooking:

  1. Bake eggplant for 40 minutes. Cool, cut lengthwise and remove the pulp.
  2. Cut pepper without seeds into small cubes, chop greens and garlic.
  3. Grind all ingredients with a blender until smooth. Add mayonnaise if desired.
  4. Serve in tartlets or with croutons.

Salad with cucumbers, carrots, cashews and honey dressing

An extremely simple, and most importantly, quick recipe.

Ingredients:

  • cucumber 1 pc.;
  • carrots 2 pcs.;
  • parsley;
  • liquid honey 3 tbsp. l .;
  • apple cider vinegar 3 tbsp. l .;
  • sesame oil 1 tbsp. l .;
  • garlic 1 clove;
  • cashews 50 gr;
  • sesame seeds 1 tbsp. l

Cooking:

  1. Grate carrots and cucumber with a Korean-style vegetable grater. Finely chop the greens.
  2. Thoroughly mix honey, oil, minced garlic, vinegar and spices. Season the salad with the resulting sauce.
  3. Garnish with nuts and sesame seeds.
